Fresh crisp apples and crunchy celery makes this salad a favorite since 1896. So many new variations have been created since then. Chicken, turkey, and dried fruit are sometimes added.
- 3 large tart eating Apples
- 1 cup Celery, julienned
- 1/2 cup Vegan mayonnaise or Vanilla Yogurt
- 1/4 cup coarsely chopped Walnuts
- 1 tablespoon lemon juice
- Crisp lettuce or endive
Pare apples, remove cores, cut into long thin strips, similar to matchsticks.
Sprinkle with lemon juice.
Cut celery into long thin strips. Add to apples and toss together. Cover and chill. Just before serving, add nuts and mayonnaise to mixture and toss gently to distribute dressing.
Pile lightly into lettuce cups on individual salad plates. (If apples have red, tender skins, leave skins on for color.)
